Friends are the family we choose ourselves….
It’s been a very long since I baked cookies. I used to sell them per dozen years ago. A very basic chocolate chip cookie recipe that deserves a place in my vault of recipes. This time, I asked Luis Xavier to help me. Again, my search and conscious effort of using locally sourced ingredients in my cooking & baking that costs more than half than the usual.
After a month or two pf planning, endless get togethers just for the sake of it, and lots of vino in between & cocktails, the day finally came. The trip dubbed as The Girls Fresh HK (Hong Kong). The best 5 days with my best friends. Totally epic. It was emotional too for some but it just sums up how much we all truly love each other. We have been friends all our lives. Some since they were in pre-school. Some since the first grade. Some since first year high school. Do the math and you’ll see how long we’ve been friends. Meeting up at the airport all dressed in black, game faces on, sash-wearing with pins (c/o Ana. Thank you Ana! We have no shame whatsoever. Hahaha. Last flight in and lucky to catch the last train to the city too. It was going to be the start of the Girls Fresh HK adventure. This trip was a celebration of all sorts. Stop allowing your fear to get the better out of you.
I had forgotten where I read that tag line. But my fear here was that, years ago I thought that Tiramisu was such a complicated recipe and time consuming. I was completely wrong. Once you have the basics laid out, the rest is just pile, pile, pile….
My friend was feeling blah which occurs more often than not. I thought it would be a nice gesture to make something that could be a “pick me up” or “lift me up” to make that person feel better. The least I could do to help. A reason to create something in the kitchen since I had a tad bit more of time. A reason to eat. Haha. I forgot too that this recipe was for a huge 9×13 tray for orders plus lots of extras on the side. Haha. Well, when I make something, it’s really meant to share with others. Cooking with love.
As I have mentioned in previous posts, I really go out of my way to use locally sourced products whenever I can. Everything in this recipe is local except the cream cheese. Those who benefited, I hope you enjoyed.
It’s been such a busy time for us. Xavier was loaded with school projects, thesis, student council meetings, prom, football and the list just goes on. I, on the other hand, get drained from work and always rushing as well but all is good.
One day, my son tells me, “Momma, we don’t go on dates anymore.” Of course I felt giddy. Wow, my teenage son wants to go on a date with me?
Yes, he is an teenager wanting to hangout with his friends and “girlfriend” or go to the gym, play basketball and football, play the guitar or piano… so when he says he wants a date… I drop everything.
It’s important to have these “dates” with your children whether over a bowl of good ramen or ice cream. Always make time for them. These times are priceless.
